Vitamin B12 is a water-soluble vitamin, which is also known by the name cobalamin. It influences numerous processes in the human body and also plays a role in our energy metabolism, nervous system and also affects our psyche. Furthermore, vitamin B12 reduces the signs of tiredness and fatigue and supports the normal functioning of the immune system. Vitamin B12 also supports normal homocysteine metabolism and, together with folic acid, it can convert homocysteine into the essential amino acid L-methionine. However, because reasonable quantities of this vitamin are only found in food of animal origin, strict vegetarians and vegans in particular have to ensure a sufficient supply of this important vitamin. Responsible for this color difference is the raw material hydroxocobalamin, which can have a color from cream to reddish.
